
Ingredients
1 Bottle of Wine you would drink (apparently this matters in gravies as well?)
3 thick slices of orange
1 1.5 cm round of Ginger
1 or 2 cinnamon sticks (just preference)
1 star anise
5-6 Cloves (if you’ve got them! We didn’t and it worked just as well, think they’d add a nice warmth though)
4 cardamom pods
A LOT OF HONEY! Honestly it’s a ‘to taste’ situation but I would say I used about half a cup. This is LOADS but also very necessary!
100ml apple juice
Method
Not a massive amount of method to this: Add it all together to a COLD pan and bring it to the heat, the key here is to maintain a constant low temperature so you don’t lose the precious alcohol and flavours of the wine.
The bottle I used was a Villa Maria Sauvignon Blanc. I think, on reflection, a slightly sweeter less dry white would have worked better!
Serve warm in a glass mug!
